Sausage Casserole

“A very filling sausage casserole with Swedish flavours.” – Helena
6–8 Sausages, mixed e.g. bratwurst, cabanoss and thick sausage, in pieces
1 Onion, in wedges
3 Parsnips, in sticks
800 g Potatoes, in wedges
3 Carrots, in sticks
200 g Cabbage, shredded
33 cl 3,5 % beer 
0,6 l Chicken stock (or vegetable)
2 Bay leaves
0,5 teasp Thyme
  Salt and pepper
  Hot & sweet Swedish mustard

1. Put all vegetables in large saucepan. Add salt, pepper and thyme to every layer. Add beer and stock until covered. Bring to a boil and then simmer until veggies are soft.

2. Sprinkle parsley on top and serve with Swedish mustard.
