Fried herring fillets in a cold caviar sauce

“Swedish caviar is a paste made from red caviar. It is smoother and milder than normal red caviar and comes in a tube.”
500 g Fresh herring fillets
0,2 l Rye flour
  Salt and black pepper
1 tblsp Butter, for frying
0,3 l Sour cream
1 bunch Fresh chives
250 g Swedish caviar
4 Wedges of lemon
  New potatoes

1. Put new potatoes on the boil.

2. Rinse the herring fillets and wipe them clean. Add salt, pepper and rye flour and turn the fillets in it. Fry until golden in butter (not in oil), 2 minutes per side.

3. Mix sour cream with chopped chives and Swedish caviar.

4. Serve with boiled new potatoes and lemon.
